Ingredients

  • 1 cup pumpkin purée
  • ¾ cup low-fat cottage cheese or nonfat Greek yogurt
  • 3 large eggs
  • 3 tbsp pure maple syrup (for natural sweetness)

  • ¾ cup almond flour
  • ¼ cup oat flour (optional for texture and structure)
  • 1 tsp baking powder

Directions
