We’re still eating the Rainbow this month at the LAB! Sometimes you might not feel so inspired when it comes to colorful foods which is why we are here to share some fun recipes! This week we are sharing Coach Isis’ Rainbow Shrimp Bowl. This is an amazing way to get in a ton of colorful veggies plus a versatile protein- shrimp. Check out the ingredients and nutrition facts below.
Spring Mix Lettuce (or a lettuce of your choice)
1/2 cup of cooked white rice
1/2 cup of black beans
4 oz of shrimp (about 9-10 pieces)
1/4 cup of shredded carrots
1/4 cup of diced purple onion
- Saute shrimp in a pan over medium-high heat in olive oil. Add pepper and garlic salt as desired.
- Build base of bowl with lettuce of choice
- Add rice, beans, diced tomatoes, carrots, and purple onion on top of the salad base. Add shrimp to the top of the bowl.
- Mix and enjoy!
Just like that, you have a super simple meal ready to go. This flavorful salad bowl includes green, orange, purple, and red vegetables. Have fun and happy cooking!
