Clean Take Out: Crockpot Orange Chicken

The holidays are fast paced and commitments are starting to take over your nights… we will tend to start cooking less and eating out more. This is when you need to become BFF’s with your crockpot. Fill it up in the morning and let it do its thang during the day. You come home to a house smelling like a restaurant and it’s ready to plate. Today’s recipe has Chinese take out taste, yet so much healthier for you. Introducing Orange Chicken in the crock pot!

Ingredients:
2ish lbs of chicken breast 

1/2 cup seasoned rice vinegar 

1/2 cup coconut aminos or soy sauce

1 cup chicken broth 

1/4 cup honey 

1/2 cup fresh orange juice (about 2 oranges squeezed)

2 cloves garlic 

2 tablespoons grated orange zest 

1/4 teaspoon ground ginger 

1/8 cup brown sugar 

1/4 cup arrowroot 

Instructions:

I modified the recipe to use what I had on hand. You could definitely sub ingredients. First, I set frozen chicken in a bowl of water to thaw while I gathered all the ingredients for the sauce (broth, orange juice, brown sugar, honey, vinegar, coconut aminos, garlic, orange zest, ground ginger, and salt/pepper to taste). Then, I combined all sauce ingredients in a bowl. Next, I poured half the sauce in the crockpot, placed the chicken in and then poured the rest of the sauce over the chicken. Cook on low for 6 hours.

I then took out the chicken and placed it on the cutting board and shredded it with two forks. I stirred the arrowroot flour into the sauce and placed the chicken back in the crockpot. Cook on high for about 20 minutes, just to get it bubbling a bit.

I served this over rice, but you can serve over cauliflower rice, veggies, or anything you want! This recipe is super simple and will definitely curb your take out cravings!
